No Sugar added Apple Muffins

STEPS

  1. Preheat oven to 375°F and place rack in middle position;
  2. In a first bowl, mix the ingredients for the filling with a fork and set aside;
  3. In a second bowl, mix dry ingredients and set aside;
  4. In a third bowl, combine liquid ingredients and grated apples;
  5. Add contents of 2nd bowl to 3rd bowl and mix well;
  6. Pour mixture into 8 large muffin cups previously coated with non-stick cooking spray;
  7. Add topping (contents of 1st bowl) to each muffin;
  8. Bake for about 30 minutes or until a toothpick inserted in the center of a muffin comes out clean and the top is comes out clean and the top is golden brown.
  9. Let sit 15 minutes before eat it up.
