Banana Nuts Maple Protein Muffins

These delicious Banana nuts Maple Muffins will change your opinion of a Vegan Protein Powder.

DRY INGREDIENTS
  • 1 1/2 cup of protein Maple Vanilla Vegan Pro from Raw Nutritional
  • 1/2 cup almond flour
  • 1/4 cup unbleached flour
  • 1/3 cup chopped walnuts
  • 5ml of baking powder

      WET INGREDIENTS

      • 2 Ripe and mashed bananas
      • 2 eggs or 2 flax eggs (2 tablespoons ground flax seeds + 5 tablespoons water, let stand for 10 min)
      • 1/3 cup of melted Nutiva coconut oil butter flavor
      • 1/3 cup maple syrup
      • 1/2 cup of milk (cow, almond or cashew)

        STEPS

        1. Preheat oven to 350 Fahrenheit.
        2. In a medium bowl, combine all dry ingredients. Set aside
        3. In a medium bowl, mix all wet ingredients together until smooth.
        4. Pour liquid batter into dry ingredients and mix until well blended. Add the chopped nuts to the mixture.
        5. Divide the mixture into 12 or 6 muffins. 
        6. Bake for 30 minutes. (- for small muffins and + for large muffins)  or until a toothpick comes out clean
        7. Let sit 15 minutes before eat it up.
